Enjoy this daily dose of fresh mountain eats with Chef Mike and Pastry Chef Kim as they teach you tips and tricks for baking and icing cookies. Ingredients 1 cup softened butter 1 ¾ sugar to sugar 1 egg 1 egg yolk 1 ½ teaspoon vanilla bean paste ½ teaspoon almond extract/or lemon (optional) 3.5-4 cups of all-purpose flour Instructions 1. Preheat oven to 350°. 2. In an electric mixer fitted with the paddle attachment, cream the butter and sugar until fluffy. Add in the egg and egg yolk and mix until combined. Add in the vanilla and almond/lemon (if you are using). Slowly add the flour, and do not over mix. The dough may be crumbly, but that's okay. Knead the dough together by hand until it is smooth. 3. Cut out desired shapes with cookie cutters. Place on parchment-lined or pan sprayed pan. Bake for 8-10 minutes.

This Massanutten Moment features Courtney who will walk you through how to make a hearty and healthy Grilled Chicken Caesar Salad. Ingredients 1 lb. grilled skinless, boneless chicken 1 bag of kale, pre-washed and pre-cut 1 package of shredded Parmesan cheese 1 bottle of Caesar dressing Instructions 1. Grill chicken and season to your taste. Slice into bite-sized pieces, then store in a container that goes in the fridge. 2. Portion kale and Parmesan cheese in several containers that also go into the fridge. 3. When it’s time to eat, heat some chicken in a toaster oven or microwave, then add to a prepared salad container. Add Caesar dressing, put the lid on, then shake to coat the kale. Enjoy!
